Prepare bread
Preheat a sandwich press, griddle, or heavy skillet over medium heat. Slice the Cuban loaf horizontally to create a top and bottom half, keeping the halves attached if desired for easier handling, or fully separate for two sandwiches.

Mix condiments
In a small bowl combine the Dijon mustard and yellow mustard (and mayonnaise if using) until smooth. This yields a bright, lightly creamy spread that balances the pork and ham.

Assemble sandwich
Spread an even layer of the mustard mixture over the inside surfaces of both bread halves. On the bottom half layer the Swiss cheese so it will melt between meats: place 3 slices of Swiss cheese covering most of the surface. Add half of the sliced roast pork (6 oz) on top of the cheese, then arrange the honey-baked ham slices (3 slices) over the pork. Distribute half of the dill pickle slices evenly across the meat. If using pork jus, drizzle 1 tablespoon over the meat to add moisture and flavor. Repeat if making a second sandwich with the remaining ingredients (remaining cheese, pork, ham, pickles and 1 tbs jus).

Top and butter
Place the top half of the bread in place. Lightly butter the outside top and bottom of the sandwich with the softened unsalted butter, spreading evenly to the edges — this promotes a crisp, golden crust when pressed.

Press and cook
If using a sandwich press (plancha or panini maker): place the sandwich in the preheated press and close. Cook for 3–5 minutes, until the bread is golden brown and the cheese has melted. If using a skillet: place the sandwich in the heated skillet and press down firmly with a heavy pan or a weighted foil-wrapped brick. Cook 3–4 minutes on the first side, then carefully flip and press the other side, cooking another 3–4 minutes until cheese is melted and bread is crisp. Adjust heat as needed to prevent burning while ensuring thorough heating.

Rest and slice
Transfer the sandwich to a cutting board and let it rest 1 minute (this helps avoid squeezing out melted cheese). Using a sharp serrated knife, cut the sandwich crosswise into 2 or 3 portions as desired.

Serve immediately while hot and melty. Provide extra dill pickles or a small side of mustard for dipping if desired.
