Brussels sprouts

Method
Brussels sprouts
- 1
Prepare sprouts
Preheat oven to 425°F (220°C). Rinse 1 lb Brussels sprouts under cold water and pat dry. Trim the stem ends and remove any yellow or damaged outer leaves. If sprouts are large, halve or quarter them so pieces are roughly uniform (about 1/2–1 inch thick).
- 2
Season
Place trimmed sprouts in a large bowl. Add 2 tbsp extra-virgin olive oil, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Toss thoroughly so every piece is evenly coated.
- 3
Roast
Spread sprouts in a single layer on a rimmed baking sheet, cut-side down if halved. Roast in the preheated oven for 20–25 minutes, stirring or shaking the pan once halfway through, until edges are deep golden-brown and centers are tender when pierced with a fork.
Optional finishing
- 4
Finish and serve
Remove sprouts from oven. Immediately drizzle with 1 tbsp lemon juice and sprinkle 2 tbsp grated Parmesan, 2 tbsp toasted sliced almonds, and 1/4 tsp red pepper flakes if using. Toss gently to combine and adjust seasoning to taste. Serve hot.
