Combine Ingredients
In the saucepan, combine the heavy cream, whole milk, sugar, and salt. Heat the mixture over medium heat until it is steaming but not boiling, stirring occasionally.
Thicken the Custard
Cook the mixture over medium heat, stirring constantly with a wooden spoon, until it thickens enough to coat the back of the spoon (170-175°F or 77-80°C).
Strain and Chill
Remove from heat, strain through a fine-mesh sieve into a bowl to remove the vanilla pod and any cooked egg bits. Let it cool to room temperature, then cover and refrigerate until cold, at least 4 hours or overnight.
Churn the Ice Cream
Once the mixture is cold, churn it in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
Freeze
Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
