Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare the Vegetables

Wash and chop the zucchini, bell peppers, carrots, and red onion into bite-sized pieces.

Season the Vegetables

In a large bowl, combine the chopped vegetables with olive oil, salt, black pepper, and garlic powder. Toss until the vegetables are evenly coated.

Roast the Vegetables

Spread the seasoned vegetables evenly on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.

Finish with Lemon and Honey

Once the vegetables are roasted, remove them from the oven and drizzle with fresh lemon juice and hot honey. Toss to combine.
