Prepare the Potatoes for Chips

Peel and cut the potatoes into thick chips. Boil in salted water for 10 minutes until slightly tender. Drain and let them cool.

Cook the Chips

Heat oil in a deep pan. Fry the chips in batches at 140°C (284°F) until cooked through but not colored, about 5-6 minutes per batch. Remove and drain on paper towels.

Triple-Cook the Chips

Increase oil temperature to 180°C (356°F). Fry the chips again until golden and crispy, about 2-3 minutes. Drain and season with salt.

Prepare the Steak Butter

In a bowl, mix softened butter, minced garlic, thyme, salt, and pepper. Form into a log, wrap in parchment paper, and refrigerate until firm.

Cook the Steak

Season the flat iron steak with salt and pepper. Heat a skillet over high heat with olive oil. Sear the steak for 4-5 minutes on each side for medium-rare. Let rest for 5 minutes.

Prepare the Watercress Salad

Toss the watercress with a drizzle of olive oil and a pinch of salt. Serve alongside the steak.

Slice the steak and serve with the triple-cooked chips and a dollop of steak butter on top.
