Prepare the Mignonette

In a small bowl, combine the finely diced cucumber, red wine vinegar, minced shallot, and chopped dill. Season with salt and pepper to taste. Mix well and let sit for at least 15 minutes to allow the flavors to meld.

Shuck the Oysters

Using an oyster knife, carefully shuck the fresh East Coast oysters, discarding the top shell and keeping the oyster in the bottom shell. Ensure to keep the oyster liquor for added flavor.

Serve

Arrange the shucked oysters on a platter and spoon a small amount of the cucumber mignonette over each oyster. Serve immediately with lemon wedges on the side.
