Prepare the Eggs

Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium-high heat. Once boiling, cover the pan, remove it from the heat, and let it sit for 12-14 minutes.

Cool and Peel

After the eggs have cooked, transfer them to a bowl of ice water to cool for about 5 minutes. Once cooled, gently tap the eggs on a hard surface and peel them.

Prepare the Filling

Slice the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, madras curry powder, mustard, salt, and black pepper to the yolks. Mix until smooth and creamy.

Fill the Egg Whites

Using a spoon or piping bag, fill the egg white halves with the yolk mixture. Sprinkle with chopped cilantro and paprika for garnish.

Serve

Arrange the deviled eggs on a serving platter and serve immediately or refrigerate until ready to serve.
