Prepare the Skate

Pat the skate fillets dry with paper towels. Season with salt and black pepper on both sides.

Breading Station

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Skate

Dredge each skate fillet in flour, dip into the beaten eggs, and then coat evenly with breadcrumbs.

Fry the Skate

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded skate fillets and fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Toast the Ciabatta

While the skate is frying, slice the ciabatta bread in half and toast until golden brown.

Assemble the Sandwich

Spread tartar sauce on the bottom half of the toasted ciabatta. Add the crispy skate fillet on top, followed by the gem lettuce leaves. Top with the other half of the ciabatta bread.

Cut the sandwich in half and serve immediately with extra tartar sauce on the side.
