Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped.

Sauté Aromatics

In a large pot, melt 2 tablespoons of butter over medium heat. Add the minced shallots and garlic and sauté until soft and fragrant, about 3-4 minutes.

Steam Mussels

Add the rinsed mussels to the pot, followed by the cider, salt, and black pepper. Cover the pot and steam for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

Garnish

Stir in chopped parsley before serving.
