Prepare the Mashed Potatoes

Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain the water and return the potatoes to the pot.

Mash the Potatoes

Add butter and milk to the drained potatoes. Mash until creamy and smooth. Season with salt and pepper to taste.

Cook the Sausages

In a skillet over medium heat, cook the Cumberland sausages until browned and cooked through, about 15-20 minutes. Ensure to turn them occasionally.

Make the Onion Gravy

In the same skillet, add sliced onions and cook until softened and caramelized, about 5-7 minutes. Sprinkle flour over the onions and stir to combine, cooking for another minute.

Thicken the Gravy

Gradually add the stock while stirring to avoid lumps. Bring to a simmer and cook until thickened, about 5 minutes. Season with salt and pepper to taste.
