Brewing Process

Mashing

Heat 5 liters of filtered water to 160°F (71°C). Add the Pilsner and CaraPils malts. Hold the temperature for 60 minutes.

Sparging

After mashing, sparge the grains with hot water to collect around 6 liters of wort.

Boiling

Bring the wort to a boil. Add Saaz hops and boil for 60 minutes. Add Hallertau hops during the last 15 minutes of the boil.

Cooling

Quickly cool the wort to around 70°F (21°C) using a wort chiller.

Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the lager yeast and seal with an airlock. Ferment at 50°F (10°C) for about 2 weeks.

Bottling

After fermentation, dissolve corn sugar in a small amount of boiling water. Add to the fermentation vessel and mix gently. Bottle the beer using sanitized bottles and caps.

Carbonation

Let the bottles carbonate at room temperature for another 2 weeks. Then chill and enjoy your Von Trapp Pilsner!
