Prepare Cauliflower Steak

Cure the Cauliflower

Remove the leaves from the cauliflower and slice it into thick steaks. In a bowl, mix sea salt and lime juice. Rub the mixture over the cauliflower steaks and let them sit for 30 minutes.

Grill Cauliflower

Heat a grill pan over medium heat and brush with olive oil. Grill the cauliflower steaks for 4-5 minutes on each side until tender and marked.

Cook Smoked Quinoa

Prepare Quinoa

Rinse the quinoa under cold water. In a saucepan, combine quinoa, smoked paprika, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until the quinoa is fluffy.

Make Salsa Taquera

Blend Salsa

In a blender, combine tomatoes, onion, jalapeño, cilantro, and lime juice. Blend until smooth. Adjust seasoning if needed.

Sauté Green Beans

Cook Green Beans

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add green beans, season with salt, and cook for 5-7 minutes until tender.

Fry Almonds

Fry Almonds

In a small skillet, heat olive oil over medium heat. Add almonds and fry until golden brown, about 3-5 minutes. Remove from heat and let cool.
