Chicken Preparation

Season Chicken

Preheat the oven to 400°F (200°C). Season the Statler chicken breasts with salt and black pepper.

Sear Chicken

In an oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts skin-side down and sear for about 5-7 minutes until golden brown.

Roast Chicken

Flip the chicken breasts and transfer the skillet to the preheated oven. Roast for 15-20 minutes or until the internal temperature reaches 165°F (75°C).

Cook Chorizo and Vegetables

In a saucepan, heat olive oil over medium heat. Add diced chorizo, onion, and minced garlic, and cook until the onion is translucent and the chorizo is browned.

Cook Quinoa

Stir in quinoa, chicken broth, and saffron. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.

Fluff Quinoa

Remove from heat and fluff quinoa with a fork. Stir in chopped parsley.

Char Corn

In a skillet, char the corn kernels over medium-high heat until slightly browned, about 5-7 minutes.

Make Vinaigrette

In a bowl, whisk together the charred corn, olive oil, red wine vinegar, honey, salt, and black pepper until well combined.

Assembly

Plate the Dish

On a plate, serve the quinoa as a base. Top with the roasted Statler chicken and drizzle with charred corn vinaigrette. Garnish with watercress.
