Mahi Mahi Preparation

Prepare the Mahi Mahi

Preheat oven to 400°F (200°C). Season the Mahi Mahi filets with salt and black pepper. Dip each filet in the beaten egg and then coat with crushed almonds.

Bake the filets

Heat olive oil in a skillet over medium heat. Sear the almond-crusted filets for about 3 minutes on each side until golden brown. Transfer to the oven and bake for an additional 10 minutes, or until cooked through.

Coconut Rice Preparation

Cook the rice

In a pot, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.

Madras Curry Cream Preparation

Make the curry cream

In a saucepan, heat heavy cream over medium heat. Stir in the Madras curry powder and salt. Simmer for 5 minutes until slightly thickened.

Plating

Assemble the dish

On each plate, serve a scoop of coconut rice topped with a Mahi Mahi filet. Drizzle with Madras curry cream, and garnish with rock shrimp, mango chutney, and pomegranate seeds.
