Preparing the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.
Making the Breading
In a large bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another bowl, whisk together the eggs and buttermilk.
Coating the Calamari
Dip each calamari ring into the egg mixture, allowing excess to drip off, then coat with the flour mixture. Shake off any excess flour.
Frying the Calamari
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Serving
Serve the fried calamari hot with lemon wedges and your homemade seafood-infused tomato sauce.
