Calamari Meatballs
Method
Cooking Instructions
Prepare the Meatballs
In a large bowl, combine the ground squid, seasoned breadcrumbs, grated Romano cheese, minced garlic, chopped parsley, egg, salt, and black pepper. Mix until well combined.
Form the Meatballs
Using your hands, form the mixture into small meatballs, about 1 inch in diameter.
Fry the Meatballs
In a large skillet, heat olive oil over medium heat. Once hot, add the meatballs in batches and fry until they are golden brown on all sides, about 5-7 minutes. Remove and set aside.
Make the Sauce
In the same skillet, add the canned crushed tomatoes, seafood stock, dried oregano, and red pepper flakes. Bring to a simmer, stirring occasionally.
Braised Meatballs
Add the fried meatballs back into the skillet, cover, and let simmer in the sauce for about 15 minutes, allowing the flavors to meld.
Serve
Serve the calamari meatballs hot, garnished with extra parsley or cheese if desired.
