1. Make the Crepe Batter

In a mixing bowl, whisk together the flour, milk, eggs, sugar, vanilla extract, and salt until smooth. Let the batter rest for 30 minutes.

2. Cook the Crepes

Heat a non-stick skillet over medium heat and add 1/2 tablespoon of butter. Pour about 1/4 cup of batter into the skillet, tilting to spread it evenly. Cook for about 2 minutes on one side until lightly golden, then flip and cook for another minute. Repeat with the remaining batter.

3. Prepare the Crème Brulee Filling

In a saucepan, combine 1 cup of heavy cream and 1/2 cup of sugar. Heat over medium heat until the sugar dissolves. In a bowl, whisk together 2 egg yolks and 1 tsp of vanilla extract. Slowly pour the warm cream mixture into the egg yolks while whisking. Return to the saucepan and cook over low heat until thickened. Let cool.

4. Assemble the Crepes

Spread a spoonful of the Crème Brulee mixture onto one side of each crepe. Fold the crepe over and place on a serving plate.

5. Add Berries

Top the filled crepes with fresh strawberries and blueberries.

6. Serve

Dust with powdered sugar and serve immediately.
