Prepare the Crawfish

Rinse the live crawfish thoroughly in cold water to remove any dirt or debris. Discard any dead crawfish.

Boil the Water

In a large stockpot, bring 4 gallons of water to a rolling boil. Add the crawfish boil seasoning, salt, and the whole lemons, garlic cloves, and onions.

Add Vegetables and Sausage

Once the water is boiling, add the potatoes and corn. Cook for about 10 minutes, then add the sausage. Boil for an additional 5 minutes.

Cook the Crawfish

Add the prepared crawfish to the pot and stir gently. Boil for 3-5 minutes until the crawfish turn bright red.

Soak and Serve

Turn off the heat, cover the pot, and let the crawfish soak in the seasoned water for 15-20 minutes to absorb the flavors. Drain and serve hot, with additional hot sauce on the side to taste.
