Prepare the Duck
Preheat the oven to 375°F (190°C). Rub the duck with salt and black pepper. Place it on a roasting rack in a roasting pan.
Roast the Duck
Roast the duck in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C). Baste occasionally with the juices from the pan.
Cook the Wild Rice
While the duck is roasting, rinse the wild rice under cold water. Combine the rice with 3 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer covered for about 45 minutes or until tender.
Make the Orange Gastrique
In a small saucepan, combine orange juice and sugar. Bring to a boil and then reduce to a simmer until it thickens slightly, about 10 minutes.
Serve the Dish
Once the duck is done roasting, let it rest for 10 minutes before carving. Serve the duck alongside the wild rice and sautéed asparagus, drizzled with the orange gastrique.
