Prepare the Beef Filet

Season the beef filet generously with salt and black pepper. Drizzle with olive oil and let it sit at room temperature for about 30 minutes.

Sear the Filet

Preheat your grill or open flame. Once hot, place the beef filet on the grill and sear each side for about 3-4 minutes until a nice crust forms.

Slow Cook the Filet

Move the seared filet to a cooler part of the grill, or wrap it in foil, and let it cook slowly for about 20-30 minutes (or until desired doneness). Use a meat thermometer to check the internal temperature.

Prepare the Mushroom Sauce

In a skillet over medium heat, add a little olive oil and sauté the mushrooms until they are golden brown. Add red wine and let it simmer until reduced by half. Season with salt and pepper to taste.

Cook Fresh Vegetables

In another pot, steam or blanch the fresh vegetables until tender-crisp, about 5-7 minutes.

Slice and Serve

Once the filet is cooked to your liking, remove it from the grill and let it rest for 5 minutes. Slice the filet into thick pieces and serve with mushroom sauce, bearnaise sauce, and fresh vegetables on the side.
