Preparation Steps
Prepare the Plantains
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.
Cook the Plantains
In a large skillet, melt the butter over medium heat. Add the sliced plantains and cook for about 2-3 minutes on each side until they are golden brown.
Add Sugar and Cinnamon
Sprinkle the brown sugar and cinnamon over the plantains in the skillet. Stir gently to coat the plantains evenly and let it cook for another 2 minutes until the sugar has melted.
Flambé with Rum or Cognac
Carefully add the dark rum or cognac to the skillet. Using a long lighter, ignite the alcohol to flambé the dish. Allow the flames to subside, which should take a few seconds.
Serve
Transfer the caramelized plantains to serving plates, placing them over a scoop of vanilla ice cream. Drizzle any remaining sauce from the skillet over the top and serve immediately.
