Preheat the grill to medium-high heat. Season the pork loin with salt, black pepper, and olive oil. Make sure to rub the seasoning evenly over the meat.

Grill the Pork Loin

Place the seasoned pork loin on the grill and cook for about 25-30 minutes, turning occasionally, until the internal temperature reaches 70°C (160°F).

Rest and Slice

Once cooked, remove the pork loin from the grill and let it rest for 10 minutes. After resting, slice it thinly.

Prepare the Vegetables

While the pork is resting, chop the assorted vegetables into bite-sized pieces. Heat butter in a skillet over medium heat and sauté the vegetables until tender (about 5-7 minutes). Season with salt and pepper to taste.
