Prepare the Duck Breasts

Preheat your oven to 400°F (200°C). Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.

Season the Duck

Season both sides of the duck breasts with salt and black pepper.

Stuff the Jalapenos

Remove the seeds from the jalapenos and slice them lengthwise. Place a slice of jalapeno on top of each duck breast.

Wrap with Bacon

Wrap each duck breast with 4 slices of bacon, securing the jalapenos inside. Place the wrapped duck breasts seam side down in an oven-safe skillet.

Cook the Duck

Sear the duck breasts in the skillet over medium-high heat for about 5 minutes until the bacon is crispy. Then transfer the skillet to the oven and roast for an additional 15-20 minutes, or until the duck reaches an internal temperature of 135°F (57°C) for medium rare.

Make the Wild Berry Gastrique

In a saucepan, combine mixed berries, sugar, red wine vinegar, and water. Bring to a boil, then reduce to a simmer and cook for about 10 minutes until the mixture thickens slightly. Strain through a fine mesh sieve to remove the seeds.

Serve

Let the duck rest for 5 minutes after removing from the oven. Slice the duck breasts and serve drizzled with the wild berry gastrique.
