Fresh Fruit Sabayon Ingredients

Method

Preparation Directions for Fresh Fruit Sabayon

1

Prepare the Sabayon

In a heatproof bowl, whisk together the egg yolks and sugar until well combined. Gradually add the dry white wine while continuously whisking.

2

Cook the Sabayon

Place the bowl over a pot of simmering water (double boiler) and continue whisking until the mixture thickens and becomes pale, about 8-10 minutes.

3

Prepare the Fruits

While the sabayon is cooking, wash and chop the fresh seasonal fruits into bite-sized pieces.

4

Serve

Remove the sabayon from heat and let it cool slightly. Spoon the fresh fruits into serving dishes and top with the warm sabayon. Garnish with mint leaves before serving.
