Prepare the Cherries
Rinse the dark sweet cherries under cold water and remove the stems. If desired, pit the cherries for easier eating.
Flambé the Cherries
In a medium skillet, combine the cherries and granulated sugar over medium heat. Stir gently until the sugar dissolves and the cherries begin to release their juices.
Add Brandy
Once the cherries are warmed through, carefully add the brandy to the skillet. Using a long lighter or match, carefully ignite the brandy to flambé the cherries. Allow the flames to subside as the alcohol burns off, about 1-2 minutes.
Serve
Scoop vanilla ice cream into serving bowls and top generously with the flambéed cherries. Garnish with fresh mint leaves.
