Soufflé Pancake

Prepare the Batter

In a bowl, whisk together flour, baking powder, and salt. In another bowl, mix egg yolks, milk, vanilla, and sugar until well combined. Gradually add the dry ingredients to the wet ingredients and mix until smooth.

Whip the Egg Whites

In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter until just combined.

Cook the Pancakes

Heat a non-stick skillet over low heat. Pour the batter into the skillet, cover, and cook for about 4-5 minutes on each side, until golden brown and fluffy.

Cook the Berries

In a saucepan, combine the mixed berries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the berries have softened and released their juices, about 10 minutes.

Whip the Cream

In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Keep refrigerated until ready to serve.

Prepare the Poaching Liquid

In a saucepan, combine water, sugar, and split vanilla bean. Bring to a simmer.

Poach the Pears

Peel and core the pears, then place them in the simmering liquid. Cook for about 15-20 minutes until tender. Remove from heat and let cool in the syrup.

Candied Walnuts

Candy the Walnuts

In a saucepan, combine sugar and water. Bring to a boil, then add the walnuts and stir until coated. Cook until the sugar crystallizes and turns golden. Let cool on parchment paper.
