Method

Roasting the Lamb

Prepare the Lamb

Preheat the oven to 400°F (200°C). Rub the lamb saddle with olive oil, minced garlic, chopped rosemary, salt, and black pepper. Place in a roasting pan.

Roast the Lamb

Roast the lamb in the preheated oven for 25-30 minutes or until it reaches your preferred doneness. Let it rest for 10 minutes before slicing.

Making the Corn Polenta

Cook the Polenta

In a saucepan, bring water or vegetable broth to a boil. Gradually whisk in the cornmeal, reduce heat to low, and cook until thickened (about 20-25 minutes). Stir in butter, Parmesan cheese, and salt.

Preparing Morels and Greens

Sauté the Morels and Greens

In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add morels and sauté for 3 minutes. Add hearty greens and vegetable broth, cooking until greens are wilted. Season with salt and pepper.

Making Harissa Sauce

Mix the Sauce

In a small bowl, combine harissa paste, olive oil, lemon juice, and salt to taste. Mix well.

Making Savory Granola

Bake the Granola

Preheat oven to 350°F (175°C). In a bowl, mix rolled oats, chopped nuts, seeds, olive oil, maple syrup, salt, and spices. Spread on a baking sheet and bake for 15-20 minutes, stirring halfway through, until golden.
