Method
Rösti Preparation
Prepare the Potatoes
Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out excess moisture.
Cook the Rösti
In a large skillet, heat the duck fat over medium heat. Add the grated potatoes, season with salt and pepper, and press down to form a flat cake. Cook for about 5-7 minutes until golden and crispy on the bottom.
Flip and Finish
Carefully flip the rösti using a plate and cook the other side for another 5-7 minutes until golden brown and crispy.
Slice and Serve
Once cooked, remove from the skillet and cut into wedges. Keep warm.
Assembly
Prepare the Garnish
In a small bowl, combine the crème fraîche, chopped shallot, and chives. Mix well and season with salt and pepper to taste.
Plate the Dish
On each plate, place a wedge of the duck fat rösti. Top with a generous spoonful of sturgeon caviar and a dollop of the crème fraîche mixture.
Garnish and Serve
Finish with additional chives for garnish and serve immediately.
