Prepare the Ingredients
Chop the scallions and set aside. Grate the aged cheddar cheese. Heat the fermented black bean salsa in a small saucepan over low heat.
Cook the Eggs
In a non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.
Warm the Tortillas
In another skillet, lightly toast the corn tortillas until warm and pliable, about 1-2 minutes per side.
Assemble the Dish
On each tortilla, layer the warm fermented black bean salsa, a sunny side up egg, grated aged cheddar, pickled peppers, and drizzle with chili crema. Finish with chopped scallions.
