Oyster Preparation
Shuck the Oysters
Carefully shuck the fresh oysters using an oyster knife, ensuring to keep the oyster on the half shell intact. Place them on a serving platter with ice to keep them chilled.
Elderflower Mignonette Preparation
Make the Mignonette
In a small bowl, combine elderflower cordial, red wine vinegar, finely chopped shallot, and freshly cracked black pepper. Mix well and let sit for about 10 minutes to allow the flavors to meld.
Serving
Serve the Oysters
Serve the shucked oysters on the ice with a small bowl of elderflower mignonette and a bottle of Graeme's hot sauce on the side for drizzling.
