Prepare the Dough

In a large bowl, combine warm water and yeast. Let it sit for about 5-10 minutes until frothy. Add flour, salt, and 2 tablespoons of olive oil. Mix until a dough forms.

Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1-2 hours or until doubled in size.

Shape the Focaccia

Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and transfer it to a greased baking sheet. Stretch the dough to fit the sheet and use your fingers to create dimples all over the surface.

Add Toppings

Drizzle the remaining olive oil over the top of the dough. Sprinkle with fresh rosemary, sea salt, and drizzle herb oil over the surface.

Bake

Bake in the preheated oven for 20-25 minutes or until golden brown. Remove from the oven and let cool slightly.

Serve with Butter and Honey

Serve warm with cultured butter and drizzle with Nootka rose honey.
