Wash and cut the Kennebec potatoes into thin strips.
Frying the Frites
Heat vegetable oil in a deep fryer to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.

Slice the onions thinly. In a skillet, melt the butter over medium heat. Add the onions and cook, stirring frequently, until they are soft and caramelized, about 20 minutes. Stir in brown sugar and balsamic vinegar, then simmer for an additional 5 minutes.
