In a large mash tun, combine the 2-Row Pale Malt and Caramel Malt with 15 liters of water. Heat the mixture to 155°F (68°C) and hold for 60 minutes, stirring occasionally.

Mash the Grains

After mashing, sparge the grains and collect the wort. Bring the wort to a boil, then add the Centennial Hops. Boil for 60 minutes, adding Amarillo Hops and Simcoe Hops in the last 15 minutes of the boil.

Boil the Wort

Once the boiling is complete, cool the wort quickly using an immersion chiller or cold water bath to a temperature of around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the American Ale Yeast on top and seal the vessel with an airlock. Allow fermentation to occur for 1-2 weeks at room temperature.

Ferment the Beer

After fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add this mixture to the beer and stir gently. Bottle the beer in sanitized bottles and cap them. Allow the bottles to carbonate for another week at room temperature.
