Make Simple Syrup

Combine and dissolve
In a small saucepan, combine 3 tablespoons granulated sugar and 3 tablespoons water. Warm over medium heat, stirring frequently, until the sugar dissolves and the mixture is clear, about 2–3 minutes. Remove from heat and cool to room temperature (about 10 minutes).
Prepare Limeade Base

Juice the limes
Juice fresh limes until you have 1 cup of strained lime juice. Strain through a fine-mesh sieve to remove seeds and excess pulp for a smooth limeade.

Mix base
In a large pitcher, combine the 1 cup fresh lime juice, the cooled simple syrup, and 2 cups cold water. Stir well and taste. If you prefer sweeter limeade, add up to 1–2 additional tablespoons sugar (or swap to agave nectar: add 2 teaspoons and stir to dissolve).

Adjust dilution
If the limeade is too tart, add additional cold water, 2 tablespoons at a time, until you reach your desired balance. For a stronger lime flavor, reduce water slightly.

Mint
If using mint, gently bruise 8–12 mint leaves between your palms or with the back of a spoon to release oils. Add bruised leaves to the pitcher and lightly muddle with a wooden spoon 6–8 times to infuse flavor without shredding the leaves too much. Refrigerate limeade with mint for 10–15 minutes before serving for best flavor.

Cucumber
If using cucumber, add 1/2 cup thinly sliced cucumber to the pitcher. Let steep for 10–15 minutes in the refrigerator, then strain out slices if you prefer a clear limeade or leave them in for presentation.

Strawberry
If using strawberry purée, stir in 1/2 cup fresh strawberry purée (blend hulled strawberries until smooth). Taste and add more if desired. For a textured drink, leave some small pieces of purée.

Ginger
If using ginger syrup, stir in 1 tablespoon ginger syrup to the base limeade. Taste and add up to 1 more teaspoon for more spice.

Sparkling
For a fizzy version, replace up to 1 cup of the cold water with 1 cup chilled sparkling water just before serving to preserve bubbles.
Serve

Fill four glasses with about 1/2 cup ice each. Pour the limeade into the glasses, dividing evenly (about 1 cup per glass). If you used mint or cucumber and prefer them strained out, strain the limeade through a fine-mesh sieve into a serving pitcher before pouring.

Garnish each glass with a lime wheel and a mint sprig. Serve immediately. Leftover limeade can be refrigerated in a covered pitcher for up to 3 days; stir before serving and add fresh ice.
