Method
Soup base
Sauté aromatics and mushrooms
Heat 1 teaspoon neutral oil in a medium saucepan over medium heat. Add the grated ginger and minced garlic and sauté 30–45 seconds until fragrant but not browned. Add the sliced mushrooms and a pinch of salt; cook, stirring occasionally, about 4–6 minutes until mushrooms have released their liquid and begin to soften and brown at the edges.
Add liquids and seasonings
Pour in 3 cups vegetable broth and bring to a gentle simmer. Stir in 1 cup coconut milk, 1 tablespoon tamari, 1/2 teaspoon rice vinegar, 1/4 teaspoon white pepper and 1/2 teaspoon kosher salt. Simmer gently, uncovered, for 6–8 minutes to let flavors meld and slightly reduce. Taste and adjust seasoning, adding up to another 1/2 teaspoon tamari or a pinch more salt if needed. If you want brightness, stir in 1/2 teaspoon fresh lime juice at the end.
Texture adjustment (optional)
For a silkier soup, use an immersion blender to pulse 2–4 times, leaving some mushroom pieces intact for texture. Alternatively, transfer half the soup to a blender, puree until smooth, and return to the pot—stir to combine.
Keep warm
Maintain the soup over low heat while you make the ginger-scallion sauce. Do not boil once coconut milk is added to avoid separation; a gentle simmer is fine.
Ginger-Scallion Sauce (garnish)
Prepare scallions and ginger
Trim scallions. Thinly slice the whites and greens separately. Finely julienne or grate 1 teaspoon fresh ginger for the sauce.
Warm the oil
In a small heatproof bowl, warm 2 teaspoons neutral oil until just hot but not smoking (you can heat it in a small saucepan over low heat or microwave for 10–15 seconds). Warming helps bloom the aromatics.
Combine sauce ingredients
Place the sliced scallion whites and most of the green slices (reserve a few for garnish) into the bowl with the ginger. Add 1/2 teaspoon tamari, 1/4 teaspoon rice vinegar, 1/8 teaspoon toasted sesame oil, 1/8 teaspoon fine sea salt, and a pinch (1/8 teaspoon) red pepper flakes if using. Pour the warm oil over the mixture; it will sizzle and soften the scallions and ginger. Stir to combine and let sit 2–3 minutes so flavors meld.
Finish
Taste and adjust seasoning (more tamari or salt if needed). Set aside at room temperature; spoon on soup just before serving so scallions remain vibrant.
Assembly & finishing
Ladle about 1 cup of the coconut mushroom soup into a warm cup or bowl.
Spoon about 1 tablespoon of the ginger-scallion sauce over the surface of each cup of soup (more to taste).
Garnish with reserved scallion greens, 1 tablespoon fresh cilantro leaves, and 1/2 teaspoon toasted sesame seeds if using.
Serve immediately while warm.
