Prepare Protein

Crispy bacon

If using bacon, place 3 slices in a cold skillet, then set over medium heat. Cook 6–8 minutes, turning occasionally, until browned and crisp. Transfer to a paper towel–lined plate to drain.

Sausage patty

If using a sausage patty, cook in a preheated skillet over medium heat 4–5 minutes per side until internal temperature reaches 160°F (71°C). Transfer to a plate and keep warm.

Sliced deli meat (turkey or ham)

If using deli slices, warm them briefly in the skillet 30–45 seconds per side until just heated through. Remove and keep warm.

Toast Bread

Spread 1 tsp butter on each bread slice (or split croissant/English muffin). Toast in a skillet or toaster oven over medium heat until golden, about 1–2 minutes per side in a skillet or 3–4 minutes in a toaster oven. Keep warm.

Scramble Eggs & Melt Cheese

Crack 4 eggs into a medium bowl. Add 2 tbsp whole milk, 1 tsp salt, and 1 tsp black pepper. Whisk vigorously until homogenized and slightly frothy (about 20–30 seconds).

Heat a nonstick skillet over medium-low heat. Add 1 tbsp unsalted butter and let it melt, coating the pan.

Pour the egg mixture into the skillet. Let eggs sit undisturbed for 10–15 seconds until edges set. Using a heatproof spatula, gently push eggs from edges toward the center, forming soft curds. Continue folding and turning every 10–15 seconds for 1.5–2 minutes until mostly set but still slightly glossy and creamy. Remove from heat just before fully firm — residual heat will finish cooking.

Sprinkle 3 tbsp shredded cheddar cheese over the eggs in the skillet. Cover the pan with a lid or tent with foil for 30 seconds to melt the cheese into the eggs.

Assemble Sandwich

Place the toasted bottom slice of bread on a plate. If using spinach, layer 2 tbsp (portion of 0.25 cups) onto the toast first.

Using a spatula, transfer the cheesy scrambled eggs onto the bread. Arrange your chosen protein (bacon, sausage patty, or deli slices) on top of the eggs.

Add optional tomato slices and a few drops of hot sauce if desired.

Top with the second slice of bread. Press gently, then cut in half if desired. Serve immediately.

Notes & Serving Suggestions

For a meltier, creamier scramble, substitute half the milk with heavy cream. Adjust seasoning to taste. Swap cheddar for Swiss, American, or pepper jack to vary flavor. Time estimates assume stovetop cooking; adjust if using grill or oven.
