Prepare the Ingredients

Dice the bell pepper and onion. Crumble the breakfast sausage.

Cook the Sausage

In a skillet over medium heat, cook the crumbled sausage until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Sauté Vegetables

In the same skillet, add diced onion and bell pepper. Sauté until softened, about 3-4 minutes.

Scramble the Eggs

In a bowl, whisk the eggs together. Pour the eggs into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are fully set, about 4-5 minutes.

Combine Ingredients

Add the cooked sausage and cheddar cheese to the eggs and stir until the cheese is melted and everything is well combined.

Assemble the Burritos

Place half of the egg mixture onto each tortilla. Drizzle with queso, then fold the sides of the tortilla over the filling and roll up tightly.
