Preparation and Cooking
Prepare the Duck
Preheat your oven to 375°F (190°C). Rinse the duck half under cold water and pat dry with paper towels. Rub the duck with olive oil, salt, and black pepper.
Roast the Duck
Place the duck on a roasting rack in a baking dish. Roast in the preheated oven for about 1 hour, or until the skin is golden brown and the internal temperature reaches 165°F (74°C). Baste occasionally with the drippings.
Make the Prickly Pear BBQ Sauce
While the duck is roasting, prepare the BBQ sauce. In a saucepan, combine prickly pear puree, brown sugar, apple cider vinegar, minced garlic, onion powder, smoked paprika, Worcestershire sauce, and cayenne pepper. Bring to a simmer over medium heat, stirring frequently for about 15 minutes until slightly thickened.
Serve
Remove the duck from the oven, let it rest for 10 minutes before carving. Serve with extra BBQ sauce on the side.
