Prepare the Chicken
Preheat your grill or a skillet over medium-high heat. Season the chicken breasts generously with blackened seasoning on both sides.
Cook the Chicken
Drizzle olive oil on the grill or skillet and place the seasoned chicken breasts. Cook for about 5-7 minutes per side, or until the chicken is cooked through and has a nice char. Remove from heat and let it rest for a few minutes.
Assemble the Wraps
Once the chicken has cooled slightly, chop it into bite-sized pieces. Lay out the flour tortillas and divide the chopped chicken among them. Top each with tomatillo salsa, shredded cheese, and chopped cilantro if using.
Roll the Tortillas
Carefully roll each tortilla tightly to enclose the filling. Place seam-side down on a plate.
Serve
Serve the blackened chicken wraps with a side of sour cream and lime wedges for squeezing on top.
