In a large brew kettle, combine the malted barley and corn with 1.5 gallons of water. Heat the mixture to 150°F (65°C) and maintain this temperature for 60 minutes to allow the sugars to extract from the grains.

Mashing

After mashing, separate the liquid (wort) from the grains using a fine mesh strainer. Rinse the grains with an additional 0.5 gallons of hot water to extract as much sugar as possible.

Lautering

Bring the separated wort to a boil and add the hops. Boil for 60 minutes, stirring occasionally. This process will help extract the flavors and bitterness from the hops.

Boiling

After boiling, cool the wort quickly by placing the brew kettle in an ice bath or using a wort chiller until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a fermentation vessel. Sprinkle the yeast on top and seal the vessel with an airlock. Allow fermentation to occur in a dark, cool place for about 1-2 weeks.

Fermentation

Once fermentation is complete, siphon the beer into clean, sanitized bottles, leaving some headspace at the top. Cap the bottles and let them carbonate for another 1-2 weeks at room temperature.

Bottling

Chill the bottles in the refrigerator and serve cold. Enjoy your homemade Modelo Especial!
