Method

Preparing the Sirloin

Season the Steak

Season the sirloin steak with salt and black pepper on both sides.

Sear the Steak

In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the sirloin steak and sear for about 4-5 minutes on each side for medium-rare. Adjust time for desired doneness. Remove from skillet and let rest.

Preparing the Potato Puree

Boil the Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Make the Puree

Drain the potatoes and return to the pot. Add butter and mash until smooth. Gradually add broth until desired consistency is reached. Season with salt and pepper to taste.

Sautéing the Mustard Greens

Sauté the Greens

In the same skillet used for the steak, add another tablespoon of olive oil. Add minced garlic and sauté for 1 minute. Add mustard greens and sauté until wilted, about 3-4 minutes. Stir in Dijon mustard and fresh herbs.

Making the Jus

Prepare the Jus

In the skillet, add the remaining broth and bring to a simmer, scraping any browned bits from the bottom. Let reduce slightly, then whisk in butter for richness.

Plating

Serve

On a plate, create a base of smoked potato puree, top with sautéed mustard greens, and place the sliced sirloin on top. Drizzle with garlic & herb jus.
