Preparation Steps
Prepare the Belgian Frites
Heat oil in a deep fryer or a large pot to 350°F (175°C). Cut potatoes into thick strips, rinse, and pat dry. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt and black pepper to taste.
Make the Peppercorn Gravy
In a saucepan, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of all-purpose flour and whisk constantly for about 2 minutes to create a roux. Gradually add 2 cups of beef or vegetable broth while whisking until the gravy thickens. Stir in freshly cracked pepper to taste and keep warm.
Assemble the Poutine
On a serving plate or in a bowl, layer the hot Belgian frites. Top with the melted Ellsworth white cheddar cheese curds. Pour the warm peppercorn gravy generously over the fries and cheese. Garnish with chopped fresh scallions.
