Prepare the Gochujang Aioli

In a small bowl, combine mayonnaise, gochujang, lemon juice, and minced garlic. Mix well until smooth and set aside.

Cook the Burger Patties

Divide the ground beef into two equal portions and shape them into balls. Heat a large skillet or griddle over medium-high heat. Once hot, place the beef balls in the skillet and smash them down using a spatula to form thin patties. Cook for about 2-3 minutes on one side.

Add Kimchi and Cheese

Flip the patties and top each with a generous spoonful of kimchi and a slice of pepperjack cheese. Cook for another 2-3 minutes until the cheese melts and the patties are cooked through.

Prepare the Buns

While the patties are cooking, slice the brioche buns in half and toast them lightly on another skillet or under a broiler.

Assemble the Burger

Spread a layer of gochujang aioli on the bottom half of each toasted brioche bun. Place a lettuce leaf on top, followed by the kimchi-covered patty with melted cheese. Top with slices of red onion and cover with the top half of the bun. Repeat for the second burger.
