Marinate the Mushrooms

In a bowl, mix olive oil, balsamic vinegar, garlic powder, salt, and black pepper. Add the portabello mushrooms and coat them well. Let them marinate for at least 30 minutes.

Prepare the Vegetables

Slice the red onion and heirloom tomato. Set aside.

Grill the Mushrooms and Onions

Preheat the grill to medium heat. Grill the marinated portabello mushrooms for about 5-7 minutes on each side, or until tender. Add the sliced red onion to the grill and cook until softened, about 3-4 minutes.

Prepare the Avocado Spread

In a bowl, mash the avocado with a fork and mix in a pinch of salt and pepper for flavor.

Assemble the Sandwich

On each pretzel bun, spread a layer of vegenaise, then layer with baby spinach, grilled portabello, grilled onion, sliced heirloom tomato, and vegan mozzarella. Top with the other half of the bun.

Serve the grilled portabello sandwiches warm with your favorite side.
