Purchase & Chill
Buy fresh oysters from a reputable fishmonger the same day you plan to serve them. Keep them cold from purchase to prep — store in the refrigerator covered with a damp towel, not submerged in fresh water.

Clean Shells
Rinse oysters under cold running water and scrub any dirt or barnacles with a stiff brush. Discard any with cracked shells or an obvious off smell.

Shuck Oysters
Using an oyster knife and a towel or glove for grip, hold the oyster cupped side down. Insert the tip at the hinge, twist to pop, run the knife along the top shell to cut the muscle, then open. Slide the blade under the oyster to detach it from the bottom shell, taking care to preserve the liquor in the shell. Place each oyster on the half shell on a rimmed tray filled with crushed ice or a layer of rock salt to keep them level and cold.

Arrange to Serve
Fill a serving platter or individual plates with crushed ice or rock salt. Nestle oysters on the half shell in the ice, spacing them so they don't tip. Add lemon wedges and a small spoon or sauce dish for the house dipping sauce and optional condiments. Garnish lightly with parsley or microgreens.
Housemade Oyster Dipping Sauce (mignonette-style with chili & citrus)

Combine the finely minced shallot and red wine vinegar in a small bowl. Let sit 3–5 minutes to soften the shallot and mellow the acidity.

Add the fresh lemon juice, lime juice, and olive oil to the shallot-vinegar mix and whisk briefly to combine.

Stir in the sea salt, freshly ground black pepper, soy sauce, and granulated sugar (or honey) until the sugar dissolves and the salt begins to soften.

Fold in the finely chopped cilantro, chives, and the minced red chili. If using, add the freshly grated horseradish for a sharper bite. Taste and adjust: add a pinch more salt, a little more citrus for brightness, or a touch more sugar/honey if it’s too acidic.

Cover and refrigerate the mignonette for at least 15–30 minutes (up to 2 hours) to allow flavors to meld. Bring out of the fridge 5–10 minutes before serving so it is cold but not ice-cold.

Transfer the sauce to a small serving bowl or spoon into individual spoons for plating. Provide a small spoon so guests can drizzle sauce over each oyster or spoon it beside the oyster.
Optional Condiments

Arrange small bowls with cocktail sauce and extra mignonette on the serving platter so guests can choose. Keep condiments chilled on the ice bed alongside the oysters.
