Prepare fruit

Wash the orange, lemon and berries. Thinly slice the orange and lemon. Core the apple and cut into 1/2-inch cubes. If using strawberries, quarter them.

Macerate fruit

In a large pitcher, combine the sliced orange, sliced lemon, apple cubes and mixed berries with the simple syrup and fresh orange juice. Gently muddle the fruit 6–8 times with a wooden spoon or muddler to release juices and oils from the citrus peel (do not pulverize).

Add spirits and wine

Pour in the brandy (or orange liqueur) and then the full bottle of red wine. Stir gently to combine all components, making sure any syrup at the bottom is incorporated.

Chill

Cover the pitcher and refrigerate for at least 2 hours and up to 12 hours. Chilling allows the flavors to meld and fruit to infuse the wine. For best flavor, stir once after 30–45 minutes of chilling.

Finish and serve

Just before serving, add club soda to the pitcher if you want a lightly fizzy sangria and stir gently. Fill individual glasses with ice (about 1/2 cup per glass), pour sangria over the ice making sure each glass gets fruit, and garnish each glass with a mint sprig.

Storage

Keep any leftover sangria refrigerated up to 48 hours. Add fresh ice and a splash of club soda before serving again to refresh.

Skinny Sangria (optional)

Prepare fruit

Wash and slice the orange and lemon. Core and cube the apple. Prepare berries if using. Use the same sizes as the classic version.

Light maceration

In a large pitcher, combine the orange and lemon slices with the apple and 15 ml simple syrup (or 1 tsp liquid stevia). Add the 60 ml fresh orange juice. Gently muddle the fruit 4–6 times—less than the classic version—to release juice without adding extra sugar.

Combine with wine

Pour in the bottle of red wine and stir to combine. Taste and adjust sweetness with a tiny additional amount of sweetener only if needed (keep low to maintain the 'skinny' profile).

Chill and serve

Refrigerate the pitcher for at least 1 hour (30 minutes will work in a pinch). When ready to serve, add 240 ml club soda to the pitcher to stretch the sangria and add brightness. Serve over ice (about 1/2 cup per glass) and garnish with a mint sprig.

Notes

Omitting the brandy/orange liqueur and reducing added sugar keeps this version lower in calories. Use diet sparkling water if you want more fizz without calories.
