Muddle ginger and lime
Add the grated fresh ginger, fresh lime juice (15 ml) and simple syrup (10 ml) to a cocktail shaker. Gently muddle or press the ginger against the shaker to release juices and aroma — about 8–10 seconds. This extracts ginger flavor without large fibrous pieces.

Build and chill
Add Seedlip Grove 42 (60 ml) and fresh pineapple juice (60 ml) to the shaker. Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is cold.

Prepare glass
Fill a mule mug or highball glass with fresh ice (use additional ice if you prefer a very cold, long drink). If you muddled large ginger fibers, double-strain the cocktail into the glass to remove solids.

Top and finish
Top the shaken mixture with ginger beer (120 ml) to taste. Give one gentle stir to combine — you want to preserve the ginger beer's fizz. Taste and adjust acidity or sweetness: add an additional 5–10 ml simple syrup for more sweetness or a squeeze of lime for more brightness.
Garnish & Serve

Garnish with a pineapple wedge on the rim, place a lime wheel on top or on the rim, and tuck a mint sprig beside the garnish. Serve with a straw if desired.
