Chill glass (optional)
Place a rocks glass in the freezer for 2–3 minutes or fill it with ice while you prepare the cocktail to chill the glass.

Muddle pineapple
Put the fresh pineapple chunks (40 g) into a cocktail shaker. Use a muddler to press and mash the fruit until it releases juice but is not pureed (about 8–10 firm presses).

Add spirits and sweetener
Add Código Reposado Tequila (45 ml), Vida Mezcal (15 ml), fresh lime juice (25 ml) and agave syrup (15 ml) to the shaker with the muddled pineapple.

Dry shake (optional)
For extra aroma and a slightly frothier texture, seal the shaker and shake vigorously without ice for 8–10 seconds.

Shake with ice
Add the ice (1 cup) to the shaker. Shake hard for 12–15 seconds until the outside of the shaker is very cold and the mixture is well diluted.

Strain
Double-strain the mixture through a Hawthorne strainer and a fine-mesh sieve into the prepared rocks glass over fresh ice. (If you prefer served up, strain into a chilled coupe and omit the ice.)

Garnish the cocktail with the pineapple wedge and lime wheel. Optionally, gently squeeze or 'slap' the lime wheel between your palms before adding to the glass to release aromatic oils.
