Muddling

    Prepare glass and ingredients

    Choose a chilled highball or Collins glass. Add the fresh mint leaves, granulated sugar and passion fruit pulp into the bottom of the glass.

    Muddle gently

    Using a muddler, press down and twist gently 6–8 times — just enough to bruise the mint and dissolve the sugar into the passion fruit. Avoid over-muddling (which makes mint bitter).

    Add lime juice

    Pour the fresh lime juice into the muddled mint/passion fruit mixture. Use a long spoon to stir briefly to help dissolve any remaining sugar into the juice and pulp.

    Add the rums

    Pour Don Q rum and Sailor Jerry spiced rum into the glass over the muddled mixture.

    Add ice and integrate

    Fill the glass to the top with crushed ice (about 1 cup). Using a bar spoon, stir vigorously for 8–12 seconds to chill and slightly dilute the drink so flavors marry.

Serve & Finish

    Top with soda

    Top the drink with approximately 90 ml club soda (adjust to taste). Give the cocktail 1–2 gentle stirs to lift the muddled mixture up through the ice without destroying the carbonation.

    Garnish and aromatics

    Lightly slap a mint sprig between your palms to release its oils, then tuck it into the glass. Add a lime wheel on the rim and float the passion fruit half (cut side up) or place it on a garnish pick. Optionally add a short straw placed to the side of the mint.

    Final tasting note

    Taste and, if desired, add a splash more soda for fizz or an extra 1 tsp sugar/simple syrup if you prefer sweeter. Serve immediately.
