Preparation
Shucking the Oysters
Carefully shuck the fresh oysters, removing the top shell and retaining the oyster in the bottom shell. Place the shucked oysters on a bed of crushed ice to keep them cold.
Making the Mignonette
In a small bowl, combine red wine vinegar, apple cider vinegar, minced shallots, chopped parsley, and black pepper. Mix well and let it sit for at least 15 minutes to allow the flavors to meld.
Serving
Plating the Dish
Arrange the oysters on a platter. Serve with the red wine apple mignonette on the side, along with freshly grated horseradish and smoked habanero hot sauce for drizzling.
